A Tex-Mex restaurant chain serving made-from-scratch tacos, enchiladas and hand-rolled tortillas, with signature sauces like Hatch Green Chile and creamy jalapeño. Founders Mike Young and John Zapp opened the first spot in 1982 in an abandoned barbecue joint on Barton Springs Road in Austin, Texas, naming it after the Spanish nickname "Chuy." Because nearly everything is made fresh daily, the freezers in a typical location are about the size of a home kitchen's.
