A Brazilian steakhouse chain, or churrascaria, serving meats roasted over open flames in the Southern Brazilian churrasco tradition. Guests flip a two-sided disc—green to keep the skewers of beef, lamb, pork, and chicken coming, red to take a break—while gaucho chefs carve tableside. Founded in 1979 in Porto Alegre, Brazil, by brothers who grew up on a farm in the Serra Gaúcha region, it now spans dozens of locations across the Americas and beyond. The name means "fire on the ground," honoring the centuries-old gaucho method of roasting meat in pits dug into the earth.
