Potbelly Corporation
A fast-casual restaurant chain that serves made-to-order toasted submarine sandwiches from neighborhood shops across the United States. It began in 1971 when Peter Hastings opened an antique store in Chicago's Lincoln Park and started toasting sandwiches on a cast-iron potbelly stove to keep customers browsing; the food proved so popular that in 1977 he renamed the business Potbelly after the stove.
