A maker of fresh bagels, sandwiches, and coffee, this restaurant company ran a family of beloved bakery-café brands across the US, most famously Einstein Bros. Bagels along with Noah's New York Bagels and Manhattan Bagel. It was born in 1995 when Boston Chicken (today's Boston Market) folded four small regional bagel chains into one national brand. Fun fact: despite the name, Einstein Bros. has no connection to the physicist Albert Einstein — the name was simply picked to suggest brainy, creative bagels.
