A fast-casual restaurant chain serving noodle and pasta dishes drawn from cuisines across Asia, the Mediterranean, and America. Founder Aaron Kennedy got the idea in 1995 after eating at a Greenwich Village noodle shop, then perfected recipes in his mother-in-law's kitchen before opening the first location in Denver. Every dish is still cooked to order in the chain's signature blue sauté pans — no microwaves or heat lamps.
